Fresh Herbs & Tomato Salad

Fresh Herbs and Tomato Salad


7 medium-size tomatoes (on-the-vine tomatoes or heirloom tomatoes preferred), sliced into wedges

1/2 red onion, finely sliced

Himalayan sea salt and freshly ground pepper

Juice of 1 lemon

2 teaspoons apple cider vinegar

1/3 cup extra virgin olive oil

2 tablespoons finely chopped basil

1 tablespoon finely chopped dill


1. In a large salad or mixing bowl, add the tomatoes, onions and fresh herbs. Add salt and a generous sprinkle of freshly ground pepper.


2. Add the lemon juice, apple cider vinegar, and olive oil. Toss well to combine. Taste and adjust seasoning if necessary.


3. Transfer to a serving bowl or dish. Serve immediately.


Serving Size = 2 cups of tomatoes with 1 tablespoon dressing
